It is a big night for fans of Chicago Fire, Chicago Med, and Chicago P.D, and it’s cast. On Wednesday, March 4, the three One Chicago franchise series are coming together for a big crossover — and for Miranda Rae Mayo, who stars as firefighter Lieutenant Stella Kidd, it’s particularly special. Overall, the quality was lower than I’d hoped for, with many relying on ultra-processed ingredients, such as palm oil, emulsifiers and, often, caged-hen eggs. Free-range products didn’t always communicate this clearly on the packet, so it’s worth checking the ingredients list. Also, some described their pastry as “buttery” when they don’t contain any butter, and are instead made with vegetable shortening (palm and rapeseed oil). Big toast with roast tomatoes, jammy eggs, mayo and hot sauce

This is a favourite lunch – and sometimes weekend breakfast – in our house. It’s delicious and filling (three eggs per person). I sometimes make another layer by spreading mashed avocado – season it and add lemon or lime – on the toast first.  I normally roast lots of tomatoes, not for this dish but to have for others (they are great to have in the fridge), as it makes no sense to put the oven on for a small amount.
