Beetroot makes a great, colourful dip, but with this method you can use any root vegetable, from carrot to squash, and even spice things up with a little chilli or ginger if you wish. Try it topped with toasted chopped walnuts, or a sprinkle of the Egyptian spice and nut blend dukkah, too. I used to think roasting radishes was just a fad, to add a bit of colour to a meal. But these are lovely, their heat subdued, flavoured with vinegar, lemon and honey. They’re delicious served with baked salmon – ideally something that’s not too assertive, so other fish dishes work well (very good with bream or red mullet) – or as part of a range of spring vegetables dishes (with asparagus, goat’s cheese and spinach tart, say).
