Cookie consent banners have nearly broken me. Every website I visit presents the same exhausting ritual — a pop-up that demands I make choices about tracking, analytics, personalization, and a dozen other categories I barely understand. I used to dutifully click through each one, carefully rejecting what I didn’t want. This is mostly because I understood the answer to the question whether you really need to accept all cookies while browsing is a firm no. Then I started just hitting “Accept All” out of sheer fatigue. That surrender felt wrong, but what else could I do? Turns out I don’t have to do anything. Consent-O-Matic, a browser extension developed by privacy researchers at Denmark’s Aarhus University, handles these consent forms automatically. It’s the equivalent of having someone stand between you and every door-to-door salesperson, politely declining on your behalf. Josef Centeno, who once dominated the corner of 4th and Main streets in downtown L.A. with his “Centenoplex” of restaurants, all centered around cozy Bäco Mercat, closed his Tex-Mex-ish restaurant Bar Amá in December to open Le Dräq, which brings the most popular dishes from the two restaurants onto one menu, including cheesy bäco bread, a mushroom coca made with vegan dough and green chicken enchiladas. Expect the menu to rotate often but to consistently feature eight dishes from Bäco Mercat, eight from Bar Amá and eight from Takoria, a new market-driven concept. The house burger is a standout, with pillowy milk bread from Centeno’s Orsa & Winston restaurant next door, a thick beef patty, Havarti cheese, and iceberg lettuce and raw red onion for crunch. A new destination for craft cocktails has emerged in Long Beach with Tokyo Noir, a speakeasy located down an alley behind El Barrio Cantina restaurant, with a glowing red lantern hung above its green door to help lead the way. Here, cocktails are created with the complexity and thoughtfulness of a multicourse tasting menu, including the umami-forward Dirty Soba that’s served in a soup bowl with a spoon, with bonito dashi, Iichiko shochu, buckwheat shochu, gin, sake vermouth and yuzu swirling inside and grated daikon as a garnish. Opened by co-owners Kevin Lee and Jesse Duron in late 2024, the bar pays homage to Japanese cocktail bars with whiskey, shochu, gin and umeshu all sourced from Japan. Even the crystal-clear blocks of ice bobbing in the cocktails are sourced from the Japanese city of Kanazawa. Source link
