‘Alive, fruity and with a soft texture’: the best supermarket frozen peas, tasted and rated | Vegetables

The sweetness of a pea is more than just a desirable taste; it’s an indication of a pea picked at the perfect moment. As the sugars convert into starch, peas lose their sweetness rapidly after picking, leading to a less sweet, more fibrous and lower-quality product. The Guardian’s journalism is independent. That’s why high-quality peas are picked, blanched and frozen as quickly as possible, usually all within two and a half hours. That said, other factors such as soil, seed quality, transportation and a stable freezer temperature all affect a frozen pea’s quality. All the peas scored well for taste, but their texture was rather more varied. To measure the sweetness of the peas, I used a Brix refractometer, a tool designed for measuring the sugar content of fruit and veg. I awarded an extra point to peas with a Brix rating of 10 or more. I also scored them on cost, country of origin and organic status. The best supermarket …

Meera Sodha’s recipe for rhubarb and custard trifle | Vegetables

The first time I had rhubarb and custard together was in a boiled sweet from a big jar in my mum’s corner shop. You could flip the sweet in your mouth and rub the flavour you wanted with your tongue. Too tart? Flip to the custard side. Too creamy? Flip again. It was one of the best ways to spend 10 minutes as a seven-year-old in the early 1990s. A few decades on, a lot has changed. Mum no longer has a corner shop, I don’t love boiled sweets any more, but eating rhubarb and custard is still a fantastic way to spend 10 minutes (at the very least). Rhubarb and custard trifle You’ll need two large, roughly 30cm x 40cm oven trays and a 20cm trifle bowl. You can make the custard ahead of time, even the day before, up to the point when you add the whipped cream. UK issued empty shelves warning as Spain and Morocco hit by storms | UK | News

UK issued empty shelves warning as Spain and Morocco hit by storms | UK | News

The impact of storms in Spain and Morocco has led a think tank to warn supermarket shelves are at risk of emptying of some fruits and vegetables. Tom Lancaster from the Energy and Climate Intelligence Unit (ECIU) said it was too soon to say whether recent floods would affect supplies in the UK, but recalled the effects of extreme weather seen in 2023 when Tesco limited the sale of certain fruit and veg. The thinktank’s analysis shows Spain and Morocco combined make up 57.9% of all tomato imports in the UK. Spain also accounts for most cucumbers and sweet peppers sold in this country, at 65.2% and 71.4% respectively. More than one third of the strawberries and raspberries come from Morocco (36%), according to the analysis. A series of winter storms have wrought havoc on Europe in recent weeks, including Storm Kristin and Storm Leonardo, which forced thousands to flee their homes and claimed lives. The storms have destroyed crops in Spain and Morocco, increasing the risk of shortages of some fruit and vegetables. Mr …

US Government Deploys Elon Musk’s Grok as Nutrition Bot, Where It Immediately Gives Advice for Rectal Use of Vegetables

US Government Deploys Elon Musk’s Grok as Nutrition Bot, Where It Immediately Gives Advice for Rectal Use of Vegetables

The US government deployed xAI’s Grok to give dietary advice — and it’s giving some eyebrow-raising advice. “Use Grok to get real answers about real food.” Until very recently, that was the message on the Trump administration’s just-launched website for its new protein-centric dietary guidelines, RealFood.gov, which was announced in a Super Bowl commercial starring Mike Tyson. And what better harbinger to spread the good word than xAI’s Grok, Elon Musk’s AI chatbot best known for glazing its creator, styling itself “MechaHitler,” and generating nudes of real women and children? But alas: the site’s message now says to “use AI” and dropped mentioning Grok by name, after NextGov contacted the administration about the bot’s placement. A White House official confirmed to the outlet that the underlying chatbot was still Musk’s, noting that it was an “approved government tool.”  And boy, is Grok doing Grok things. After experimenting with the chatbot, which the website promises can help you “plan meals,” “shop smarter,” and “cook simply,” 404 Media found that it will freely give advice on the …

Meera Sodha’s vegan recipe for prosperity toss noodle salad | Vegetables

This Tuesday marks the start of the lunar new year and the year of the fire horse, which represents fresh opportunities, personal growth and good fortune. I, for one, am keen to usher that horse in, and to celebrate I’ll be making this noodle salad, which is a variation on one I first ate at Mandy Yin’s restaurant, Sambal Shiok. It’s a dish that’s eaten across Malaysia and Singapore, and the idea is that everyone around the table tosses the salad high into the air at the same time: the superstition goes that the higher the salad is tossed, the more luck will ensue. Come on, Nelly. Prosperity toss noodle salad Dried beancurd sticks (and pink sushi ginger) can be found in Chinese supermarkets or online. When soaked, they become like chewy thinly sliced tofu. This recipe is all in the preparation: the only cooking is frying the beancurd sticks and cashews and boiling the noodles. You’ll need a large lipped bowl or platter (big enough to serve four from) and four pairs of chopsticks. …

Vegetable nitrates linked to lower dementia risk in long-term study

Vegetable nitrates linked to lower dementia risk in long-term study

Dementia is often described as a disease shaped by age and genetics, but daily choices also play a role. New international research suggests that what you eat, and where certain nutrients come from, may quietly shape brain health over decades. The research followed more than 54,000 adults in Denmark for up to 27 years. During that time, 4,750 participants developed dementia, including 191 cases diagnosed before age 65. By tracking diets, water sources, and health outcomes over nearly three decades, scientists were able to explore how different sources of nitrate and nitrite related to long-term brain health. Dr Nicola Bondonno, a postdoctoral research fellow at Edith Cowan University’s Nutrition and Health Innovation Research Institute, says dementia develops from many influences. “Dementia is a complex disease shaped by both genetics and lifestyle,” she said. “Dietary factors could also be important.” Cubic spline curves depicting association between source-dependent nitrate and nitrite intakes and incident dementia in participants of Danish Diet, Cancer and Health Cohort Study.
