‘It’s become something of a craze’: influencers spread news of healthy French cheese | France

At the cheesemakers in the village of Franois, eastern France, a stream of what looks like runny, beige gloop is being potted, packaged and dispatched for delivery as fast as it can be made. The freezer room, normally piled high with pallets of the product, is almost empty. For what must be the first time in the history of cancoillotte – a cheese product that until recently was little known outside the eastern Franche-Comté – there was talk of a “rupture” in supplies, and an unprecedented shortage. France may be what Charles de Gaulle described as an ungovernable country of 246 kinds of cheese, but only one of them can claim to have won the hearts of fitness fanatics and social media influencers. In just a few weeks, word has spread about cancoillotte – pronounced con-qwy-yotte – among those who want to have their cheese and eat it without melting toned muscles or sending cholesterol soaring. Unlike most cheeses, cancoillotte is low in fat, high in protein, cheap and until recently something of a niche …

5 new ways to enjoy cottage cheese

5 new ways to enjoy cottage cheese

In the wake of rising egg prices, a humble ingredient rose to popularity amongst high-protein enthusiasts and cost-effective consumers alike. I’m talking about cottage cheese, the curd-filled dairy product that sits alongside yogurt, butter and milk in the refrigerated section of your local grocery store. It’s deliciously creamy. It’s rich in texture. And it spans both savory and sweet. Much of the recent cottage cheese craze can be attributed to social media, namely TikTok. Recipes range from innovative to straight-up wacky. Take, for example, elaborate platters of vegetable crudité, complete with cottage cheese, yellow mustard and a sausage or two. The idea is to dip each raw vegetable or sausage first in mustard, then in cottage cheese, before taking a bite. There’s also cottage cheese chocolate chip “cookie dough” and cottage cheese ice cream — recipes that definitely lean more on the bizarre side. Indeed, cottage cheese is having a moment. Back in July 2023, Google searches for cottage cheese “rose to the highest levels recorded since 2004,” according to The New York Times. Search …

£600 for cheese? The Brazilian beach scams that cost visitors dear | Scams

When Lisa Selby* used her debit card to pay for two slices of barbecued cheese from a beach vendor in Rio de Janeiro, she expected to pay 40 reais (£5.90) for the snack. But shortly after the payment had gone through, she realised that she had been charged 4,000 reais (£590) after the vendor added two extra zeros to the card reader. “He showed me the right number on the contactless terminal, but then turned it round to face him and, unbeknownst to me, added two zeros just as I was about to tap with my phone,” she said. “He then gestured that there was no paper for a receipt and walked away.” Holidaymakers have been warned to beware of the crime in Rio. Last month a beach vendor was arrested after a British man was duped into paying £1,500 for a kebab, while an Argentinian tourist discovered a £3 corn on the cob had cost her £3,000. What it looks like Unscrupulous traders take advantage of tourists who are unfamiliar with the local currency …

Helen Goh’s springtime spinach sponge cake with cream cheese icing – recipe | Food

There is a particular green that belongs to spring: pale and luminous, it’s softer than the dark foliage of winter, and quieter than the glossy abundance of summer herbs. Spinach, the colour of new growth, captures this moment perfectly. Tender and almost impossibly vivid, this cake loses its metallic edge in the heat of the oven, leaving a gentle, vegetal brightness. Baked in a shallow tin and spread with cream cheese icing, when sliced into squares, it produces the perfect ratio of cake to icing and tastes uncommonly good. Toad-in-the-hole with leeks and cheese recipe

Toad-in-the-hole with leeks and cheese recipe

My kids tell me this is the BEST toad in the hole ever. They preferred it with cheddar sprinkled over the top rather than Stilton, but you could use either, or indeed any similar cheese (just not Parmesan types, that’s too hard). You can make this in a roasting tin or ovenproof pan, and serve at the table straight from the vessel. Choose good-quality sausages for the best result.
